The Kitchen Lab: How To Make A Ginger Bug

I have only ever won “best in a subject” once in my entire life. It was the year I was graduating from primary school, and I won best in science. I still remember feeling so incredibly happy. It felt like a sweet compensation because I was genuinely sad about not coming first overall in that final term. Winning that science award was such a relief!

My prize was a novel called Mother’s Choice, and it was a very good read. I absolutely loved novels back then, and I will probably share more on that bookish side of me in a future post.

Years down the line, that early win led me straight to the science class in high school. I have always possessed an inquisitive mind. I love hands-on teaching, and I naturally excel way more in practical experiments than in rigid theory. However, when I moved on to university, I ended up studying computer science. Suddenly, I didn’t get to get my hands dirty with physical experiments anymore because all our practicals were entirely digital.

Don’t get me wrong, I wish there was a course I loved more than computer science, but there isn’t! So, I accepted the lack of physical mess. Yet, that deep-seated urge to experiment, mix stuff, and combine different elements never left me. I am sure it shows clearly in my cooking!

Turning My Kitchen into a Science Lab

For the past few years, I have been dealing with persistent tummy issues. I tried absolutely everything. Unfortunately, the medical route just kept giving me medications to suppress the temporary symptoms rather than uncovering anything to fix the root cause.

Because of this, I started doing my own deep research into natural ways to support my gut. Quick disclaimer: this is absolutely not medical advice! I am simply sharing my personal research and what is currently working wonders for my own body.

Discovering how deeply fermented foods support stomach health made perfect sense to me. These digestive issues began about three years ago. Coincidentally, when I looked back, I realized that the last three years were exactly when I stopped making homemade yogurt and stopped regularly buying ogi (pap) and iru (fermented locust beans). I had a total lightbulb moment!

I decided to intentionally reintroduce traditional fermented foods into my diet. I put on my imaginary primary school science lab coat and goggles and got straight to work. I created a dedicated “fermentation corner” right in my kitchen. Within days, I started a sourdough starter, a fresh batch of ogi, and a bubbly ginger bug.

I will share the details for the other projects in separate posts, but today is entirely dedicated to the magic of the ginger bug.

What in the World is a Ginger Bug?

Now, you are probably asking yourself, “What in the world is a ginger bug?” Well, I am so glad you asked!

After extensive lectures from the University of YouTube, I learned that a ginger bug is a naturally fermented, wild-yeast ginger concentrate. It relies entirely on the beneficial wild yeasts and bacteria that naturally live on the skin of fresh ginger.

Once your starter culture becomes active and bubbly, you can use it to naturally carbonate almost any sugary liquid. The wild yeast eats the sugars in your drink and literally burps out carbon dioxide gas. That trapped gas is what creates a perfectly fizzy, natural soda. 🀯

This is definitely not a quick, instant recipe. It requires a daily dose of patience, but I promise you it is incredibly rewarding.

How to Make a Ginger Bug & Make a Fizzy Drink

Ingredients
  

  • Fresh organic ginger organic is crucial because conventional ginger is often irradiated, which kills the wild yeast
  • Filtered water chlorinated tap water can stall the fermentation
  • Granulated white sugar

Method
 

Step 1: Culturing the Ginger Bug Starter
  1. Day 1: Grate or roughly chop a chunk of fresh ginger. In a clean glass jar, combine 2 cups of filtered water, 2 tablespoons of the chopped ginger, and 2 tablespoons of sugar. (I grated all my ginger and kept it in the fridge so my feedings can be quicker).

  2. Cover: Stir well to dissolve the sugar. Cover the mouth of the jar with a breathable tea towel secured with a rubber band, or rest a lid loosely on top (do not seal it tightly, or gas will build up!). Leave it sitting on your counter at room temperature.

  3. Daily Feedings: Feed your bug at approximately the same time every single day. Add 2 tablespoons of fresh chopped ginger and 2 tablespoons of sugar, stirring thoroughly.
  4. Check for Activity: Mine took exactly 3 days to wake up. You will know your starter is ready to use when you see active bubbles rushing to the top and you hear a slight fizz when you stir it. If you taste a tiny drop, the sweetness should be very faint and tangy, not cloyingly sweet.

Step 2: How to Carbonate Your Drinks
  1. The Formula: The magic fermentation ratio is 1 part strained ginger bug to 16 parts sugary liquid.
  2. Prepare Your Base: I brewed 8 cups of strong ginger tea by boiling grated ginger with sugar. I also made 8 cups of hibiscus tea, and let them cool down completely to room temperature. Never add your bug to warm liquid, or you will accidentally cook your live yeast!
  3. Mix: Strain your active ginger bug and measure out 1 cup of the liquid. Pour 1/2 cup directly into your cooled, strained ginger tea, and the other 1/2 cup into your cooled, strained hibiscus tea.
  4. Bottle Safely: Pour the mixture into bottles, leaving at least an inch of headspace at the top. Seal them tightly and place them back in your fermentation corner.
  5. The Pro-Tip Check: While traditional guides recommend glass flip-top bottles, I saw too many horror stories of shattered glass explosions online! To stay completely on the safe side, I used clean, recycled plastic bottles. This allowed me to physically squeeze the sides of the bottles each day to gauge exactly how much pressure was building up inside.

  6. Chill and Serve: My hibiscus tea took 3 days to carbonate, while the ginger beer took 4 days. (I probably could have pushed the ginger beer to 5 days, but I was terrified of an explosive mess!). Once the plastic bottles felt rock-hard to the touch, I popped them straight into the fridge to halt the fermentation, chilled them completely, and served over ice!

The Ultimate Kitchen Lab Results

The experiment worked perfectly! The final drinks were incredibly refreshing. They had a gorgeous, bright fizz and a subtle, pleasant tang, honestly, it reminded me slightly of mixing a splash of omidun (sour water from ogi) into a drink, but in the best way possible.

Because the hungry wild yeast consumes the vast majority of the sugar during the bottling process to create the carbonation, the finished soda is not overly sweet. Because of how the science works, I don’t think you can successfully make this recipe sugar-free, as the yeast absolutely needs real sugar to survive and create bubbles.

Overall, this was a highly successful, nostalgic kitchen science experiment, and I am officially hooked on making my own probiotic sodas.

For now, I have placed my active ginger bug starter inside the refrigerator to pause the fermentation cycle. This puts the yeast to sleep so I don’t have to keep feeding it every single day on the counter. Next up on my laboratory hit list is trying out water kefir as a carbonation alternative!

  2. When you bring out the ginger starter from the fridge, will it continue it’s fermentation process in a warm environment or that automatically ends the process?

    Amazing experiment by the way, would love to try it too but we’re in winter and it maybe hard to get a warm place now without finding cockroaches all over the bottleπŸ₯Ί

    1. It will continue, you just have to feed it for about 2 days first.
      You can still ferment in winter. You can put it in the kitchen cabinet instead of the countertop. Just take note that it may take more days, but it should ferment.
