Prepare the Plantains:
- Peel the plantains and carefully scoop out a little flesh from the middle to form a “boat.”
Air-Fry:
- Place the plantains in the air fryer basket and air-fry at 390°F (200°C) for 20 minutes, or until golden and tender.
Make the Filling:
- While the plantains cook, heat the oil in a medium skillet over medium heat. Add onions and habanero, and sauté until fragrant.
- Add shrimp and fish, season lightly, and stir-fry until about 70% cooked.
Add the Peppers:
- Toss in diced red and green bell peppers. Stir for a few seconds, you want them slightly crunchy.
Finish & Assemble:
- Stir in cilantro (if using) and turn off the heat. Once the plantains are done and cool enough to handle, fill each “boat” with the seafood mixture.
Serve Warm:
- Enjoy your flavorful, protein-packed plantain boats on their own or with a side salad!
