Air-Fried Plantain Boats with Shrimp & Fish Filling

If you’ve ever craved something hearty, fun, and totally satisfying, this is it. These air-fried plantain boats stuffed with shrimp and fish would definitely hit the spot.

Ingredients
  

For the Plantain Boats:
  • 6 plantains firm ripe
For the Filling:
  • 130 g raw shrimp diced
  • 113 g whiting fish diced
  • ½ small onion diced
  • ½ habanero pepper chopped
  • 1 tbsp vegetable oil
  • 3 cloves garlic minced
  • 1 medium red bell pepper diced
  • ½ medium green bell pepper diced
  • 1 handful cilantro chopped (optional)
  • Seasoning to taste salt, bouillon, pepper, etc.

Method
 

Prepare the Plantains:
  1. Peel the plantains and carefully scoop out a little flesh from the middle to form a “boat.”
Air-Fry:
  1. Place the plantains in the air fryer basket and air-fry at 390°F (200°C) for 20 minutes, or until golden and tender.
Make the Filling:
  1. While the plantains cook, heat the oil in a medium skillet over medium heat. Add onions and habanero, and sauté until fragrant.
  2. Add shrimp and fish, season lightly, and stir-fry until about 70% cooked.
Add the Peppers:
  1. Toss in diced red and green bell peppers. Stir for a few seconds, you want them slightly crunchy.
Finish & Assemble:
  1. Stir in cilantro (if using) and turn off the heat. Once the plantains are done and cool enough to handle, fill each “boat” with the seafood mixture.
Serve Warm:
  1. Enjoy your flavorful, protein-packed plantain boats on their own or with a side salad!
