Ingredients
  

  • Cornmeal Make sure it is plain cornmeal. When you check the ingredient list, it should say only 100% corn. No added baking mixes or preservatives (trace minerals are totally fine).

Method
 

Step 1: The Fermentation
  1. Soak: In a large glass or ceramic bowl, add your cornmeal. Cover it completely with room-temperature water. Ensure the water line sits at least 3 inches above the cornmeal layer.

  2. Cover: Stir the mixture thoroughly. Cover the bowl with a clean tea towel and leave it to ferment on your kitchen counter at room temperature for 2 to 5 days.

  3. Check for Readiness: You will know your ogi is ready when the top becomes frothy, bubbly, and smells wonderfully tangy. In my warm kitchen, it took exactly 2 days to reach perfection.

Step 2: Processing and Storing
  1. Decant the Liquid: Carefully pour off the clear, sour water from the top into a separate container. Do not throw this water away! This is your omidun (ogi water).
  2. Blend Smooth: Transfer the remaining thick cornmeal paste into a high-powered blender and blend thoroughly until the gritty texture completely disappears. (If you want it ultra-smooth like store-bought pap, pass it through a fine mesh sieve or chiffon cloth now).

  3. Recombine: Transfer the smooth blended paste into a clean storage bowl. Pour the decanted omidun right back over the top, and top it up with a bit more fresh room-temperature water.

  4. Settle: Pop the bowl directly into the fridge to chill. After a short while, you will see the rich starch settle into a solid layer at the bottom, with the clear, sour omidun resting perfectly on top.

Step 3: How to Prepare the Perfect Bowl of Pap
  1. Scoop and Mix: Scoop a few spoonfuls of the settled starch into a serving bowl. Stir until it forms a smooth, completely lump-free liquid paste.
  2. The Hot Water Test: Bring fresh water to a rolling boil. Carefully pour the boiling water directly into your bowl in a steady stream while continuously mixing the paste, and saying a few silent prayers (IYKYK!).
  3. Cover and Set: Pop a lid or small plate over the bowl for a few seconds to let it steam.
  4. The Results: If your prayers worked, you will open the lid to find a gorgeous, thick, custardy bowl of perfect pap!

  5. The Rescue Method: If your prayers didn't work today and it stays watery, do not cover your face in shame just yet! Simply put the bowl into the microwave and heat it at 30-second intervals, stirring thoroughly in between each burst, until it completely thickens up into a beautiful custard.
