Method
 

  1. Make the beef filling: Sauté garlic and blended carrots until softened. Add ground beef, season, and cook until browned. Stir in habanero. Simmer until moisture reduces.
  2. Prepare the salad: Combine corn, diced green tomatoes, onions, lime juice, pepper, and salt.
  3. Assemble tacos: Fill taco shells with beef, corn-tomato salad, cheese, and any additional sides you enjoy.
  4. Serve and enjoy!

Notes

• Add more veggies if you want: Shredded lettuce, tomatoes, onions, sweet corn, or sautéed peppers all bulk up the tacos without adding many calories.
• Make it creamy: A little Greek yogurt, salsa crema, or light sour cream adds richness without a lot of calories.
• Meal-prep friendly: The cooked ground beef keeps well in the fridge for 3–4 days. Store the meat separately from the taco shells to prevent sogginess.
