Cook the pork: In a medium pot, add the lean pork chops, chopped onion, habanero, half of the chopped basil, and seasoning. Add a splash of water and cook on medium heat until the pork is tender and fully cooked.
Set pork aside: Once cooked, remove the pork pieces from the pot and set aside.
Cook the potatoes: In the same pot, add the potatoes and crushed garlic. Let them simmer until nearly tender.
Add the carrots: Toss in the sliced carrots and allow to simmer until slightly soft.
Combine everything: Add the cooked pork back into the pot. Stir in the diced tomatoes and the remaining chopped basil.
Simmer & serve: Let it simmer on low heat for a few minutes so all the flavors marry together. Adjust seasoning if necessary, and serve hot. Garnish with green spring onions
