Pork and Potato Bites

Ingredients
  

  • 676 g lean pork chops
  • 1 small onion chopped
  • 1 habanero pepper chopped
  • 10 basil leaves chopped
  • 1129 g potatoes cut into chunks
  • 3 cloves garlic crushed
  • 90 g carrots sliced
  • 102 g diced tomatoes
  • 2 g green spring onions chopped
  • Seasoning to taste salt, bouillon, or your preferred spice blend

Method
 

  1. Cook the pork: In a medium pot, add the lean pork chops, chopped onion, habanero, half of the chopped basil, and seasoning. Add a splash of water and cook on medium heat until the pork is tender and fully cooked.
  2. Set pork aside: Once cooked, remove the pork pieces from the pot and set aside.
  3. Cook the potatoes: In the same pot, add the potatoes and crushed garlic. Let them simmer until nearly tender.
  4. Add the carrots: Toss in the sliced carrots and allow to simmer until slightly soft.
  5. Combine everything: Add the cooked pork back into the pot. Stir in the diced tomatoes and the remaining chopped basil.
  6. Simmer & serve: Let it simmer on low heat for a few minutes so all the flavors marry together. Adjust seasoning if necessary, and serve hot. Garnish with green spring onions

Notes

  • You can swap pork for chicken breast or lean beef if you prefer.
  • Add a squeeze of lemon or lime before serving for a fresh pop of flavor.
  • For meal prep, divide into portions and refrigerate.
  • Keep the oil minimal; the natural fat from the lean pork adds enough richness.
