Heat a saucepan over medium heat, add the oil and sauté garlic and habanero until fragrant.
Add carrots and continue to stir-fry for about 1 minute.
In a separate pot, cook noodles in plain water. Remove them as soon as they loosen up (don’t cook fully to avoid mushy stir fry).
Add half of the seasoning packet and soy sauce into the stir fry, then toss in the noodles. Stir until noodles reach desired softness.
Serve hot with steamed egg white bites on the side. Garnish with chopped green onions and enjoy!
