I got the inspiration from Sisi Yemmie’s recipe, where she stuffed fried plantains with beans and minced beef. It looked so good that I knew I had to recreate it, but in a fitfam-friendly way. Instead of frying, I air-fried my plantains with no oil at all, then filled them with a delicious seafood mix of shrimp and whiting fish.
Let me tell you, this air-fried plantain boats recipe was finger-licking good!
A Fitfam Twist on a Nigerian Favorite
I originally wanted to make a simple beans-and-plantain recipe, like Sisi Yemmie, but I didn’t want the flavors to feel repetitive. Since I just cooked porridge beans with plantain cubes in it. Then I thought of gizzards, you know, like the popular gizdodo. But when I opened my freezer to get said gizzards, I saw some shrimp staring at me. I knew what had to happen.
And really, what better way to fill something called a “boat” than with seafood?
I had barely enough shrimp left, so I tossed in some whiting fish, and it turned out amazing, flavorful, juicy, and light.
A Delicious Reminder That Eating in a Calorie Deficit Doesn’t Have to Be Boring
This meal fits perfectly into a healthy lifestyle. I air-fried my plantains with no oil, made the filling with just 1 tablespoon of oil, and measured everything raw (like I learned from my rice calorie comparison post).
To keep the calories accurate, I also made sure all six plantains were around the same weight, no more than 3g difference. That way, I could track precisely.
Each plantain boat came to 294 calories, with 62g carbs, 11g protein, and 3g fat, proof that low-calorie meals can still be full of flavor!

Air-Fried Plantain Boats with Shrimp & Fish Filling
Ingredients
Method
- Peel the plantains and carefully scoop out a little flesh from the middle to form a “boat.”
- Place the plantains in the air fryer basket and air-fry at 390°F (200°C) for 20 minutes, or until golden and tender.
- While the plantains cook, heat the oil in a medium skillet over medium heat. Add onions and habanero, and sauté until fragrant.
- Add shrimp and fish, season lightly, and stir-fry until about 70% cooked.
- Toss in diced red and green bell peppers. Stir for a few seconds, you want them slightly crunchy.
- Stir in cilantro (if using) and turn off the heat. Once the plantains are done and cool enough to handle, fill each “boat” with the seafood mixture.
- Enjoy your flavorful, protein-packed plantain boats on their own or with a side salad!
