- Blend the oats and chia seeds into a fine powder.
- In a large bowl, mix the flour, blended oats & chia, baking powder, salt, stevia, Greek yogurt, soy milk, and vanilla extract until combined.
- In a separate bowl, whip the egg whites to soft peaks.
- Gently fold a portion of the whipped egg whites into the batter to loosen it.
- Then fold in the rest of the whipped egg whites carefully to maintain fluffiness.
- Heat a non-stick pan over medium heat and lightly grease with butter.
- Cook the pancakes in batches until bubbles form on top and the bottom is golden, then flip and cook the other side.
- Serve warm and enjoy!
