Ingredients
  

  • 1 cup all-purpose flour
  • ½ cup dry whole grain oats blended
  • 1 tbsp chia seeds blended
  • cups 100% liquid egg whites Eggland’s Best
  • ¾ cup whole milk plain Greek yogurt Chobani
  • cup original soy milk Silk
  • 1 tsp baking powder
  • 1 dash salt
  • 1 tsp vanilla extract
  • 4 drops stevia extract
  • 1 tbsp butter for greasing pan

  • 1 Electric whisk Or use a regular whisk to get your arm workout *winks*
  • 1 Saucepan

Method
 

  1. Blend the oats and chia seeds into a fine powder.
  2. In a large bowl, mix the flour, blended oats & chia, baking powder, salt, stevia, Greek yogurt, soy milk, and vanilla extract until combined.
  3. In a separate bowl, whip the egg whites to soft peaks.
  4. Gently fold a portion of the whipped egg whites into the batter to loosen it.
  5. Then fold in the rest of the whipped egg whites carefully to maintain fluffiness.
  6. Heat a non-stick pan over medium heat and lightly grease with butter.
  7. Cook the pancakes in batches until bubbles form on top and the bottom is golden, then flip and cook the other side.
  8. Serve warm and enjoy!

Notes

  • This is a balanced meal with protein, carbs, fat, and fiber.
  • Adding syrup, fruit, or additional toppings will increase calories.
  • To make dairy-free, use dairy-free yogurt.
