Spaghetti Carbonara Inspired by a Fun Challenge

Spaghetti Carbonara

When Opeyemi Famakin threw out the #critiquewithope challenge to elevate spaghetti and egg, I knew I had to jump in. My inspiration came from the classic Spaghetti Carbonara: creamy, comforting, and rich. However, I wanted to prove that you can enjoy the same satisfaction even on a weight-loss journey.

So, I swapped a few things around. Instead of traditional spaghetti, I used my trusty low-carb version to keep things light. I replaced Pecorino Romano cheese with nutritional yeast flakes (for that cheesy, umami punch), and instead of guanciale, I went for smoked turkey. The results? Absolutely delicious.

The final plate of my Spaghetti Carbonara came to just 275 calories, and it was packed with flavor. I even added a sprinkle of parsley for color and freshness, because we eat with our eyes too! Challenges like these remind me that eating healthy doesn’t have to be boring. You can still make food fun, creative, and flavorful without going off track.

Course: dinner, lunch, Main Course
Calories: 275

Ingredients

  • 56 g low-carb spaghetti Carbe Diem brand or preferred
  • Salt to taste
  • 1 large egg
  • 2 tbsp nutritional yeast flakes
  • 2 tsp black pepper
  • 55 g smoked turkey leg shredded
  • Optional garnish: chopped parsley

Method

  1. Boil low-carb spaghetti in salted water until cooked to your preferred texture, then drain and set aside.
  2. In a bowl, whisk together the egg, nutritional yeast flakes, and black pepper until smooth.
  3. In a non-stick pan, lightly heat the smoked turkey until warm and slightly crispy.
  4. Reduce the heat to low, add the cooked spaghetti, and quickly pour in the egg mixture, stirring continuously to coat the pasta and create a creamy texture without scrambling the eggs.
  5. Taste and adjust seasoning with salt if needed.
  6. Serve warm and garnish with chopped parsley for a pop of color.

Notes

You can swap smoked turkey for grilled chicken or salmon if desired. For a richer flavor, add a splash of bone broth while tossing the pasta.
