Turkey Sandwich

Repurpose your leftover thanksgiving turkey breast by whipping up this easy sandwich.

Ingredients
  

  • 4 slices low calorie bread
  • 120 g turkey breast skinless
  • 60 g carrots shredded
  • 1/4 small onion chopped
  • 1 tbsp light mayo
  • 1 tbsp light butter

Method
 

  1. Make the filling:
  2. Dice the turkey breast into smaller pieces
  3. Add the carrots, onions and mayo and mix
  4. Assemble the sandwich:
  5. Butter 1 side of the bread slices and place 2 in a panini press, buttered side down
  6. Scoop the filling and spread it evenly between each bread slice
  7. Cover with the remaining 2 slices of bread, buttered side up
  8. Let it toast for 3-5 minutes or till golden brown
  9. Serve with tea or any low calorie drink of choice.
